Showcase your nutrient-boosting peanut recipes in the Skinny on Nuts Recipe Contest!

Get the skinny on nuts. Peanuts are nutrient dense, providing a good source of niacin, magnesium, folate, fiber and Vitamin E, and 170 calories in a one ounce serving. Not to mention, peanuts contain more antioxidants than broccoli, carrots or green tea.

Peanuts provide more protein than any nut – 7 grams per ounce. When you combine nutrition and value, peanuts out perform all other nuts. With their superior flavor and preference among children and adults alike, peanuts are a delicious and easy addition to any healthy eating plan to help meet the requirements of the 2010 Dietary Guidelines for Americans in a variety ways. Create and submit your own flavorful and nutritious peanut recipe in one of the following categories (entrants may submit one recipe per category. Barring that each recipe is different):

Pumped up Protein

Must contain at least 2 oz of peanuts, 2 tablespoons of peanut butter and/or cup of peanut flour

Incredible Antioxidants

Must contain at least 2 oz of peanuts, 2 tablespoons of peanut butter and/or cup of peanut flour
Include another Superfood (i.e. yogurt, berries, sweet potatoes, kiwi, salmon, eggs, quinoa, beans or broccoli)

Knock Out Nutrition

Must contain at least 2 oz of peanuts, 2 tablespoons of peanut butter and/or cup of peanut flour
Choose two additional food groups (veggies, fruits, whole grains or dairy) to incorporate into your dish

 

Criteria for recipe submission

Includes Standard English measurements and provides full preparation directions
Includes high resolution photo and/or video submission
No other nuts, besides peanuts, used in recipe
If submitting a video, the video must be no longer than 4 minutes in length and no larger than 100 MB

Deadline for submission is April 22, 2011.

Prizes

One Grand Prize winner will receive a $500 gift certificate to Cooking.com, Serious Eats online store, and a peanut lover’s gift basket. Two runner-up winners in each category will receive peanut lover’s gift basket.

Entries will be judged by National Peanut Board representatives on creativity and originality of the dish (30%), nutrition (20%), perceived taste of the finished product (30%) and presentation (photo and/or video submission) (20%). In the event of a tie, the tied entries will be re-judged based solely on creativity and originality. Information regarding entries and judging will not be disclosed.
